Best Italian Strawberry semifreddo

Todays recipe is strawberry Semifreddo. Semifreddo is an Italian word meaning “half cold” or “half frozen.” It refers to frozen desserts similar to ice cream but instead made with whipped cream.

Strawberry Sauce
- 1¼ cups quartered strawberry
- ¼ cup sugar
- ¼ cup water
- 1½ teaspoons cornstarch
- 2 tablespoons water
- 1 teaspoon lemon juice
Semifreddo
- 1 cup heavy cream
- ¼ cup yogurt
Toping
- ½ cup strawberry 2
- 2 teaspoons sugar
- 1 teaspoon lemon juice
Strawberry Sauce
In a saucepan add the strawberries, sugar, and water and heat the mixture to boiling, and stir from time to time.
dissolve the cornstarch in water and Pour the cornstarch mixture into the boiling strawberry mixture.
Stir on low heat for 5-8 minutes or until the mixture has thickened. On the other hand, you can control the texture of the sauce as you prefer.
If you want a nice red color add a few drops of red food coloring. It’s optional.
leave the sauce cools completely.
Semifreddo
Whip the heavy cream for 3-5 minutes or until stiff peaks form.
Add the yogurt and mix it gently then add the strawberry sauce and mix gently.
Pour the mixture into the molds and tap them on the counter a few times to settle the top and get the air out.
Place the molds in the freezer for at least 2-3 hours.
Topping
Cut the strawberry into small pieces.
In a saucepan add the strawberries, sugar, and water bring to a boil and cook it for 5-6 minutes and stir constantly.
Leave it to cool completely.
Take the semifreddo out of the molds and pour the sauce on the top.
The size of the cups I used:
1 Cup = 250 ml
1/2 Cup = 125 ml
1/4 Cup = 65 ml
