These 3-ingredient coconut truffles are rich, tasty, full of white chocolate and coconut flavor, and incredibly easy to make! They melt in your mouth.

Ingredients

  • 300 g white chocolate

  • 90 ml full fat milk

  • 30 g unsalted butter

  • 1 cup coconut

Directions

  • Place chopped chocolate and milk in a bowl.
  • Carefully microwave in 30-second intervals, stirring in between intervals until melted. Alternatively, set it over a saucepan of simmering water, stirring occasionally.
  • Then add the butter and stir until dissolved.
  • Stir in 1/2 cup shredded coconut. Cover the bowl and chill in the refrigerator for 4 hours or until firm.
  • Place 1/2 cup shredded coconut in a small bowl. Take the chocolate mixture out of the fridge. Using an ice cream scoop, or melon baller, scoop out small sections and form them into balls with your hands.
  • Roll each ball in coconut and place on a baking sheet lined with parchment paper. Refrigerate until firm.
  • Store truffles in the fridge in an airtight container for up to a week. Serve chilled.
