Vanilla Cream Pie Recipe is one of my favorite pie recipes. It is lightly creamy with a crispy crust. You have to try it when you have guests over.

Instructions

  1. In a large bowl add the flour and salt.
  2. grate in the butter and mix with a fork.
  3. Add the cold water and continue mixing with a fork ( if the dough looks a little dry add more 1 tablespoon of cold water).
  4. Knead the dough lightly with your hands then wrap it with plastic wrap and place it in the fridge for at least 1 hour before using it.
  5. Roll the dough with a rolling pin.
  6. Unroll the dough into the pie pan without stretching. Press into pie pan.
  7. Bake at 180C for 15 – 20 minutes. and leave it to cool completely.
  8. VANILLA CREAM

  9.  Pour milk into a pot, add vanilla beans or vanilla extract, and place over medium heat, stirring the beans mix into the milk. Remove from heat just before it comes to a boil.
  10. Whisk together the egg and egg yolk bowl in a bowl, then add sugar and cornstarch . Whisk to combine, pour the milk, and whisk well.
  11. Place on medium-high heat and whisk continuously until thickened. About 5 minutes or so.
  12. Once the mixture has thickened reduce heat to medium and continue stirring. Cook an additional 2-4 minutes. then remove from heat.
  13. Transfer to a large bowl, add butter and stir until the butter is all melted.
  14. Cover surface with plastic and chill to bring down to room temperature.
  15. Pour the filling into the baked pie shell. Smooth out, and refrigerate for at least 4 hours. 
  16. Add the whipped cream to the top of the pie before serving.
