Ingredients

  • 2 eggs

  • 1 teaspoon vanilla

  • 1/2 of milk

  • 1/2 of oil

  • 1/2 cup white sugar

  • 1 3/4 cup flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon teaspoon of baking soda

  • 1 tablespoon of cinnamon

  • 1 cup of Shredded carrots

Directions

  • Preheat your oven to 180 Celsius.
  • Line a cupcake pan with cupcakes papers.
  • In a bowl add the eggs, vanilla, oil, and yogurt and mix them with a hand whisk.
  • Then add the white sugar and mix well.
  • After that add the flour, cinnamon, baking soda, and baking powder and mix until all ingredients are mixed well. Then add the shredded carrots and mix with a spatula until incorporated.
  • Pour the cake batter in the cupcake pan.
  • Bake it on preheated over for 20-25 minutes( after 20 minutes keep a close eye on it because every oven is different in terms of temperature put a toothpick in the middle of the cake if it’s clean then the cake is baked).
  • Leave it to rest in the cake pan for 10 minutes before take them out of the mold.
