Ingredients
2 eggs
1 teaspoon vanilla
1/2 of milk
1/2 of oil
1/2 cup white sugar
1 3/4 cup flour
2 teaspoons baking powder
1/2 teaspoon teaspoon of baking soda
1 tablespoon of cinnamon
1 cup of Shredded carrots
Directions
- Preheat your oven to 180 Celsius.
- Line a cupcake pan with cupcakes papers.
- In a bowl add the eggs, vanilla, oil, and yogurt and mix them with a hand whisk.
- Then add the white sugar and mix well.
- After that add the flour, cinnamon, baking soda, and baking powder and mix until all ingredients are mixed well. Then add the shredded carrots and mix with a spatula until incorporated.
- Pour the cake batter in the cupcake pan.
- Bake it on preheated over for 20-25 minutes( after 20 minutes keep a close eye on it because every oven is different in terms of temperature put a toothpick in the middle of the cake if it’s clean then the cake is baked).
- Leave it to rest in the cake pan for 10 minutes before take them out of the mold.
