Ingredients

  • 1/4 cup sugar

  • 2 tablespoons honey

  • 3/4 teaspoons baking soda (NOT BAKING POWDER)

  • 300g chocolate

Directions

  • First, prepare your tray. Line a baking tray with parchment paper or foil.
  • Place the saucepan on the heat add the sugar and honey and let the mixture melt, then turn on the stove on low heat and let it simmer until the color umber. It takes only 3-4 minutes.
  • Turn off the heat, Whisk in the bicarbonate soda fast, and stand back and the syrup will turn into a thick foam.

  • Quickly stop whisking and pour this immediately onto a piece of baking parchment, or a Silpat sheet.
  • Leave until set cold for about 1 hour and then break it up into small pieces.

  • Melt the chocolate in the microwave and then add the crushed honeycomb and mix well.

  • Pour it into a chocolate mold and place it in the fridge for 1 hour.

  • Take the chocolate out of the mold.
