  1. In a bowl mix the butter and sugar very well.
  2. Then add the egg and vanilla and mix until they incorporated.
  3. Then add lemon juice and lemon zest and mix with a spatula.
  4. Finally sift in the flour, and baking powder, and mix until it becomes a soft dough.
  5. Chill it for 1 – 2 hours or over night.
  6. scoop it into balls and put them i a parchment pepper.
  7. Bake the cookies in a preheated oven at 180C for 12 – 15 minutes.
