This Middle Eastern Rice Pudding recipe also known as Riz Bi Haleeb ( رز بالحليب ) is one of the most popular recipes in the Middle East. Made in one pot with just a few ingredients.

  1. In a medium pot, add the unwashed rice with water over medium-low heat an let them cook for about 5-7 minutes, or until all the water is gone.
  2. Add the milk and sugar to the pot and mix well. Then add the thick cream and mix well.
  3. Bring mixture to a boil, whisking continuously to avoid the mixture from sticking to the bottom of the pot.
  4. Lower heat to low and cook for additional 10 minutes, until rice is cooked well. stirring occasionally.
  5. Remove from heat, and stir in rose water and vanilla.
  6. Transfer mixture to serving bowls immediately. Place the dishes in the fridge for at least 1 hour.
  7. Garnish with crushed pistachios.
