  • Place the saucepan over medium heat and stir until the sugar dissolves.

  • Bring the mixture to a boil, then attach a candy thermometer to the side of the pan.

  • Continue boiling the mixture without stirring, reaching (112-115°C) or the soft-ball stage on a cold plate test (when you drop a small amount of syrup into cold water it forms a soft ball that flattens when removed with your fingers).

  • **If you do not have a candy thermometer let boil for 10 minutes on low heat. 

 

 

 

Second: Prepare the cornstarch mixture for Turkish delight recipe:

  • In a separate bowl, mix the cornstarch and water.

  • Stir with a whisk, wooden spoon, or a silicone spatula until the mixture is smooth and lumped-free.
